Kidney Bean Appetizer
- 1 9-ounce can Red Kidney beans – rinsed
- 1 minced onion
- 1 minced clove of garlic
- 3/4 cup ground walnuts
- 1 teaspoon salt
- 1 teaspoon corriander
- 1/4 cup parsley – minced (reserve a little for garnish)
- Juice of one lemon (reserve a little for garnish)
- Olive Oil
- Mash first 8 ingredients into a bowl to well mixed
- Roll mixture into balls
- Garnish with reserved parsley, lemon juice, and olive oil
NOTES: This was really good. It would be good with chickpeas as well.
