Kidney Bean Appetizer

  1. 1 9-ounce can Red Kidney beans – rinsed
  2. 1 minced onion
  3. 1 minced clove of garlic
  4. 3/4 cup ground walnuts
  5. 1 teaspoon salt
  6. 1 teaspoon corriander
  7. 1/4 cup parsley – minced (reserve a little for garnish)
  8. Juice of one lemon (reserve a little for garnish)
  9. Olive Oil
  • Mash first 8 ingredients into a bowl to well mixed
  • Roll mixture into balls
  • Garnish with reserved parsley, lemon juice, and olive oil

NOTES: This was really good. It would be good with chickpeas as well.
