Best Pancakes and Syrup

This pancake and syrup combo is like eating a warm cinnamon bun. Very good and easy to make.

Cinnamon Sugar Pancake Syrup

  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup soy milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon honey
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda

Bring butter, sugar, buttermilk, vanilla extract, corn syrup, and cinnamon to a simmer in a large saucepan over medium-high heat. Once simmering, whisk in baking soda (it’s going to foam A LOT before it settles), and cook for 10 seconds before removing from heat. Serve warm.

Fluffy Old Fashioned Pancakes

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups soy milk (or regular milk)
  • 1 egg
  • 3 tablespoons butter, melted

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until just incorporated. Will be a little lumpy.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
