Tomato Pie
Ingredients
- 3-5 sliced tomatoes (enough to layer twice in a pie pan)
- Prepared pie crust, cooked
Cheese Mix:
- 2 cups of pimento cheese (or make your own with 1/2 cup mayonnaise, 1 cup cheddar, 1 cup mozzarella, pepper to taste)
Herb Mix:
- 3 cloves of garlic (grated or minced)
- 1 bunch of green onions chopped
- Fresh basil (handful, chopped)
Instructions
- Preheat oven at 350F.
- Put tomatoes on a single layer towel and sprinkle with salt for 15-20 minutes to draw out the moisture.
- Blot tomatoes
- Put a layer of tomatoes, followed by herb mix in pie crust. Repeat 1-2 times until your pie crust is full.
- Top with cheese mix
- Bake for 35 minutes or until pie is nicely browned.
- Cool for 15 minutes before serving
