Stick Blender Mayonnaise – Easy, fast, delicious

  • 2 egg yoks
  • Juice of 1/2 a lemon (1 tablespoon)
  • 1 teaspoon white vinegar
  • 3/4 teaspoon salt
  • 1/8 teaspoon of agave syrup (or honey, or sugar)
  • 1 teaspoon dijon mustard
  • 1 1/2 cup of oil (1 cup canola oil and 1/2 cup olive oil is a good combination, but you can use any combination
  1. Put all ingredients in a tall cylindrical container. Usually your stick blender with come with one of these, but a large glass works well.
  2. Let ingredients settle a bit. Your eggs will be on the bottom and the oil will float over it.
  3. Place your stick blender into the container over the egg yolks and rest it on the bottom. Pulse your blender on the lowest speed until you can see the yolks and oil emulsify and start to look like mayonnaise.
  4. When the bottom looks like mayonnaise, you can start lifting your stick blender a little at a time to incorporate a bit more oil. Keep incorporating until your entire batch looks like thick, creamy mayonnaise.
