Minty Tomato-Fennel Salad

  • Fennel (sliced thin and chop, remove core)
  • 1lb of cherry tomatoes (halved)
  • 1/2 red onion, chopped
  • 3/4 cup mint
  • kalamata olives (few)

Vinaigrette

  • Juice of one lemon
  • 4 Tablespoons of olive oil
  • Salt and pepper to taste

Toss in a bowl. Let sit for 15-20 minutes.
