Minty Tomato-Fennel Salad

- Fennel (sliced thin and chop, remove core)
- 1lb of cherry tomatoes (halved)
- 1/2 red onion, chopped
- 3/4 cup mint
- kalamata olives (few)
Vinaigrette
- Juice of one lemon
- 4 Tablespoons of olive oil
- Salt and pepper to taste
Toss in a bowl. Let sit for 15-20 minutes.
